This is a variation of the traditional Spanish Paella. In Sardinia, pasta is substituted for rice which is much more prevalent in Italy. Additionally, Italian sausage, mild or spicy, generally replaces the Chorizo. Italian tomatoes, such as the famous San Marzano variety are used in greater quantities than the tomatoes in Spanish paella. This creates a richer tomato sauce in the Italian version of this famous Spanish dish.
