Perhaps the most popular tapas in all of Spain are olives. The olives can be filled with anchovies, cheese or red peppers. They can be tossed in oil, served with feta or sprinkled with rosemary.
The most common specialty dish found throughout Spain. While there are many regional variations, the most common version is the one made with eggs, potatoes and onion fried in olive oil. The tortilla may be eaten hot or cold; it is commonly served as a tapas or picnic dish throughout Spain.

I would give Ken 10 stars! Ken prepared 2 kinds of paella for my dad's 80th birthday party, a seafood paella, and the Paella de la Casa. He traveled to a remote location and created a magical atmosphere to make us feel like we were in Spain. He was personable, professional and made the best paella that I have had, including Spain! The sangria, meatballs and handmade empanadas rounded out the perfection. Most importantly he engaged with every single one of our guests (there were 50+) and made them, as well as my dad, feel special. Most of the guests had never had paella, so his expert explanation of the dish and all of the other items that he prepared were appreciated. I also appreciated Ken's excellent follow up and organizational skills. He put my mind at ease from the first inquiry to the last frantic phone call when I didn't think that I had enough appetizers.
